I have always liked yogurt or curd, as they called in India, so obviously, I was drawn to this tempered, creamy rice and yogurt combination. I was hooked at the first bite and I remember, I refilled my plate so many times that I had no place for dessert. Always use fresh curd but if the curd is little sour then add milk accordingly. Garnish with curry leaves, dry red chilly and serve chill. Next add dried red chilli, cashew, green chili , curry leaves, and saute till cashews become slightly golden and curry leaves become crisp. When the pressure settles down on its own, remove the lid and check the doneness of rice.
Curd Rice is a South Indian dish where soft cooked mushy rice is simply mixed with curd and salt. It is later finished off with a flavorful tempering made with basic whole spices & curry leaves.
